Nog-Doodle Cookies

3 cups all-purpose flour

⅔ cup dark brown sugar

⅔ cup plus ¼ cup white sugar

½ cup butter, melted

1 egg

½ cup eggnog

1 tsp rum flavor extract

1 tsp baking soda

1 tsp salt

2 tbsp nutmeg

  1. Preheat the oven to 400 degrees.
  2. Whisk together butter, dark brown sugar, and ⅔ cup white sugar.
  3. Add eggs, eggnog, and rum flavor, then mix well.
  4. In a separate bowl, mix together flour, baking soda, and salt. Add to wet ingredients and mix well.
  5. Chill dough for ~15-30 minutes.
  6. In a separate bowl, combine the remaining ¼ cup white sugar with nutmeg and mix well.
  7. Roll dough into balls, approximately 1 tbsp each.
  8. Roll each ball in the sugar/nutmeg mixture to coat, then place evenly spaced on a baking sheet.
  9. Bake for 9 – 11 minutes.
